    pound bacon, plus 2 tbsp. drippings

    medium onion, chopped (about 1/2 cup)

     pound ground beef or bulk pork sausage, cooked and crumbled

    can (about 15 ounces) baby lima beans, rinsed and drained

  • 1

    can (about 15 ounces) butter beans, rinsed and drained

  • 1/2

    cup packed brown sugar

  • 1

    can (10 ounces) diced tomatoes with green chilies, undrained

  • 1/2

    cup ketchup

  • 1/4

    cup yellow mustard

How to Make It

Step 1

Set the oven to at 350°F.  Cook the bacon in batches in a 12-inch skillet over medium heat until crisp. Remove the bacon from the skillet and drain on paper towels. Coarsely chop the bacon. Remove all but 2 tablespoons drippings from the skillet. Add the onion and cook until tender, stirring occasionally.

Step 2

Stir the onion, beef, pork and beans, lima beans, butter beans, brown sugar, tomatoes and green chilies, ketchup and mustard in a 3-quart casserole. Season to taste and top with the bacon.

Step 3

Bake for 1 hour or until the bean mixture is hot and bubbling.

    KILLER is right!!

    This was such a huge hit!!! With the brown sugar & I used Ro*Tel so the spicy & sweet combo was fantastic!!!

    simple to make and surprisingly good

    Made this over the weekend and was pleasantly surprised that it was a hit with my family. I used hamburg, not sausage and the kick from the tomatoes with chilies was just enough to give this dish the added flavor that it needed.
