    large russet potato, shredded (about 3 cups)

    green onion, chopped (about 1/2 cup plus 2 tablespoons)

    cup all-purpose flour

    can Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup

How to Make It

Step 1

Place the potatoes into a colander.  Rinse with cold water. Blot dry with paper towels.

Step 2

Stir the potatoes, 1/2 cup onions, flour and 1/2 cup soup in a medium bowl.

Step 3

Heat vegetable oil in a 12-inch nonstick skillet over medium-high heat.  For each latke, drop 2 tablespoons potato mixture in the skillet, flattening into a 3-inch round with the back of a spoon.  Cook the latkes, 5 or 6 at a time, until well browned on both sides.  Drain the latkes on paper towels.

Step 4

Stir the sour cream, remaining soup and onions in a small bowl.  Serve the sour cream mixture with the latkes.

    Latkes with Sour Cream-Mushroom Sauce

    Very good recipe- crispy on the edges and flavorful. I used 2 large baking potatoes- ended up with 4-1/4 cups shredded potato- kept all other ingredient measurements the same, and was fine. I used the white to light green part of the onion for the potato mixture, and the green tips for the sour cream. Didn't need all the sour cream mixture, but used the rest on baked potatoes the following night- was yummy.
