This quick and savory "pie" is made by layering corn tortillas with seasoned ground beef, enchilada sauce, olives and Cheddar cheese...it's great for casual dinners or even as a hearty appetizer or snack.

pound ground beef
medium onion, chopped (about 1/2 cup)
cups canned enchilada sauce
ounces sliced pitted ripe olives, drained
(6 inch) corn tortilla
cups shredded Cheddar cheese (about 8 ounces)
cup sour cream
Cook the beef and onion in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat. Stir the enchilada sauce, water and olives in the skillet.
Alternate layers of tortillas, meat mixture and 1/2 cup cheese in a round 2-quart casserole, ending with the cheese. Cover and bake at 400°F. for 25 minutes. Let stand for 5 minutes and cut into wedges. Serve with sour cream, if desired.
