Say good-bye to dry, boring chicken breasts thanks to chicken broth and a few simple seasonings.  Brining tenderizes, locks in moisture, and seasons the meat throughout. It's a foolproof method for some of the best grilled chicken…ever!

How to Make It

Step 1

Stir the broth, lemon juice, basil, parsley, salt and black pepper in a large bowl.  Add the chicken and turn to coat.  Refrigerate for at least 1 hour or up to 8 hours.  (The broth and salt in this brining mixture will pull the flavors of the herbs into the chicken and help the chicken retain more moisture during cooking).

Step 2

Lightly oil the grill rack and heat the grill to medium. Remove the chicken from the brining mixture.

Step 3

Grill the chicken for 35 minutes or until cooked through, turning the chicken over once halfway through the grilling time and brushing often with the brining mixture. Discard the remaining brining mixture.

Recipe Tips

  • Ingredient Substitution: You can substitute 1 1/4 pounds skinless, boneless chicken breast halves for the bone-in chicken.  Just reduce the grilling time to 15 minutes or until cooked through (Timing will vary depending on the size of the chicken breasts you have.)

    Lemon Herb Grilled Chicken

I crushed the basil and thyme leave myself. Then I marinated the chicken in the mixture for the first half of the day, and made sure i had some mixture left to brush over the chicken as I grilled it. The flavor was amazing! Everybody loved it! This is possibly one of my favorite recipes for grilled chicken!

Or you can cook in it in the oven at 400F. Keep the bottom of the pan covered with the broth mix ture turning it often. Cook it covered for 40 minutes, then uncovered for 10 minutes. It comes out golden brown, and very juicy.
