Heat the oven to 375°F.  Grate 1 1/2 teaspoons zest and squeeze 1 tablespoon juice from the lemon. Stir the lemon zest, lemon juice, soup, rosemary, thyme and garlic in a medium bowl.  Reserve 1 cup soup mixture for the gravy.  Place the chicken into a shallow roasting pan.
Roast the chicken for 20 minutes.  Brush the chicken with 1/4 cup soup mixture.
Roast for 1 hour and 15 minutes or until the chicken is cooked through.  Remove the chicken to a serving platter and keep warm.

    really tasty simple roast chicken

the scores for this recipe on your site are confusing, true a couple of folks didn't like it all, but most loved it and for some reason only gave two stars. anyway, i've made dozens of roast chicken recipes and this one is definitely a success. the cooking time has to be increased for such a large chicken, but that's no big deal. to be honest, i find most campbells recipes hopelessly mundane and tasteless, but this one was just right. once you've got a roast chicken, it's the gift that keeps on giving. i've already used the wonderfully flavored meat for a buffalo chicken dip and will use the rest for a good stir-fry. my son loves the drumsticks so those get eaten as is. thanks campbells!
