     medium carrot, peeled and sliced (about 5 cups)

     medium onion, thinly sliced (about 1/2 cup)

     small green pepper, thinly sliced (about 1 cup)

    can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup

  • 1/2

    cup vegetable oil

  • 1

    cup sugar

  • 3/4

    cup white vinegar

  • 1

    teaspoon yellow mustard

  • 1

    teaspoon Worcestershire sauce

  • 1

    teaspoon salt

  • 1

How to Make It

Place the carrots in a 3-quart saucepan and cover with water. Heat to a boil over medium-high heat. Reduce the heat to low and cook for 5 minutes or just until the carrots are tender. Drain the carrots and let them cool for 10 minutes. Stir the carrots, onion and pepper in a large bowl. Heat the soup, oil, sugar, vinegar, mustard, Worcestershire, salt and pepper in a 2-quart saucepan over medium-high heat to a boil. Remove the saucepan from the heat and let the soup mixture cool to room temperature. Pour the soup mixture over the vegetables. Cover and refrigerate for at least 12 hours. Serve the vegetable mixture hot or cold.

    Best Carrot salad

    Mom use to make this for us when we were kids using carrot sticks now we have mini pre bagged carrots I just cut those in 1/2 and we are good to go. Was a popular recipe in the south in the 50's and 60's because there was no mayo to spoil and it lasted good outside. One of my old time favorites! Brought it back in the past few years and got many raves.

    Marinaded Carrots

    I have had this recipes since the 1980's and it is so good. I take it to potlucks and always come home with an empty dish and many request for the recipe. I like that it keeps well in the refrigerator. It's also a good way to get my granddaughter to eat her vegies. Sweetrose46

    First, I searched the site for Copper Pennies as I know the title of this recipe. I was glad that I found it under Marinated Carrots. I have made this for years (but forgot amounts) and everyone loves it!
