pounds skinless, boneless chicken breast halves, pounded to 1/2-inch thick
cup Crisco® canola oil
tablespoons (flat-leaf) fresh Italian parsley
tablespoons chopped fresh chivesor 2 teaspoons freeze-dried chives
tablespoon chopped fresh thyme leaves
teaspoons chopped fresh oregano leaves
teaspoon garlic powder
teaspoon black pepper
Grate 1 1/4 teaspoons zest and squeeze 1/2 cup juice from the lemons.
Stir the lemon juice, lemon zest, oil, parsley, chives, thyme, oregano, garlic powder and black pepper in a shallow, nonmetallic dish or a gallon size resealable plastic bag. Add the chicken and turn to coat. Cover and refrigerate for 2 hours or overnight. Remove the chicken from the lemon juice mixture. Discard the lemon juice mixture.
Lightly oil the grill rack and heat the grill to medium. Grill the chicken for 10 minutes or until cooked through, turning it over once halfway through the grilling time.
