Cook fresh sweet potatoes in chicken broth and you'll notice they're incredibly flavorful...add a touch of brown sugar, and you've got a spectacular and simple side dish.

  • 4

    large sweet potato or yams (about 2 1/2 pounds), peeled and cut into 1-inch pieces (about 8 cups)

  • 2

    tablespoons packed brown sugar

How to Make It

Step 1

Heat the broth and potatoes in a 3-quart saucepan over medium-high heat to a boil.

Step 2

Reduce the heat to medium.  Cover and cook for 10 minutes or until the potatoes are tender.  Do not drain.

Step 3

Mash the potato mixture with the brown sugar.  Season to taste.

    This recipe is super simple and tastes great

    I'm 51years old and this was the first time I had even bought sweet potatoes. I had surgery recently and a friend brought over a meal one night that included mashed sweet potatoes. They weren't bad so I decided I would try to make them myself. I made this recipe for my husband and brother-in-law, to go with ham cooked with brown sugar and pineapple and a couple of vegetables. For a first-time experiment it sure got rave reviews. My brother-in-law insisted that I email the recipe link to his wife (and my husband was tickled that I finally cooked sweet potatoes for him for the first time in our 30-year marriage!). I recommend this recipe whole-heartedly. I love the fact that it's just a handful of ingredients and except for the sweet potatoes it's stuff I always have on hand. The toughest part was peeling the sweet potatoes!
