Meatless Baked Ziti

Meatless Baked Ziti

0 0

This cheesy, Meatless Baked Ziti is just as satisfying as the original Italian recipe thanks to a tomato sauce made with plant-based protein. Baked in the sauce, pasta noodles become perfectly al dente without needing to be boiled first, which means you can get this satisfying vegetarian baked ziti on the table even faster for everyone to enjoy. Even without meat, this recipe provides an excellent source of iron, fiber and calcium, and serves up a quarter of the vegetables you need in a day. This easy baked ziti recipe bakes in one dish, making for quick clean-up.

How to Make It

Heat the oven to 425°F.  While the oven is heating, stir the sauce, water, half the mozzarella cheese, the ricotta and half the Parmesan cheese in a 13x9x2-inch baking dish.  Place the baking dish onto a rimmed baking sheet.  Stir in the uncooked ziti, making sure it's submerged in the sauce mixture (the dish will be very full, so you'll need to stir carefully).  Cover the baking dish tightly with foil. Bake for 50 minutes or until the ziti is tender.  Uncover and stir the ziti mixture.  Top with the remaining mozzarella and Parmesan cheeses. Bake, uncovered, for 5 minutes or until the cheeses are melted.  If desired, serve topped with dollops of additional ricotta cheese and some fresh basil.
