What makes this meatloaf so tasty is the addition of a can of tomato soup.  Served with roasted potatoes and carrots, this dish is comfort food at it's best.

    pounds ground beef

  • 2

    cans (10 3/4 ounces each ) Campbell’s® Condensed Tomato Soup

  • 1/2

    cup dry bread crumbs

  • 1

    tablespoon Worcestershire sauce

  • 1/8

    teaspoon black pepper

  • 1

    egg, beaten

  • 1

    small onion, finely chopped (about 1/4 cup)

  • 1 3/4

    pounds potato(about 6 medium potatoes), cut into quarters

  • 6

    medium carrot, cut into 2-inch pieces (about 3 cups)

  • 3/4

    cup water

How to Make It

Thoroughly mix the beef, 1/2 cup soup, bread crumbs, Worcestershire, black pepper, egg and onion in a large bowl. Shape the beef mixture into an 8 x 4-inch loaf in a 13 x 9 x 2-inch baking pan. Arrange the potatoes and carrots around meatloaf in the baking pan. Bake at 375°F. for 30 minutes. Spoon off any fat. Stir the remaining soup and water in a small bowl. Spoon the soup mixture over the meatloaf and vegetables. Bake for 30 minutes or until the meatloaf is cooked through and the vegetables are fork-tender.

    I always use oatmeal (quick cook or regular) instead of bread crumbs. I find the oatmeal takes on the look and mouth feel of the meat after it cooks. More fiber is a great plus. I mix a bit of hot sauce in my tomato for an extra kick.

    I love that it's an entire meal!

    This is a great week night meal, easy to put together. Relax while it bakes.

    Yummy for over 40 years

    Easy to make. Can be done in stove top as well as in oven. Mom made this for me in mini loaves on the stove 40 years ago. My family loves it. It freezes well too. Haven't tried with veggies but the sauce would make these yummy. We don't include the worchestire as my husband doesn't like that flavor.
