    cups Swanson® Chicken Broth or Swanson® Chicken Stock

  • 1/4

    cup fresh parsley

  • 1/4

    cup black olives

  • 1

    tablespoon lemon juice

  • 1/4

    teaspoon black pepper

  • 1

    can (14.5 oz.) stewed tomatoes

  • 1 1/4

    cups uncooked long grain white rice

  • 1 3/4

    pounds skinless, boneless chicken breast halves

  • 1/2

    teaspoon garlic powder

  • 1/2

    teaspoon paprika

How to Make It

Step 1

Stir broth, parsley, olives, lemon juice, black pepper, tomatoes and rice in 3-qt. shallow baking dish. Cover baking dish.

Step 2

Bake at 375°F. 20 min.  Uncover baking dish.  Place chicken onto rice mixture.  Sprinkle with garlic powder and paprika.  Cover baking dish.

Step 3

Bake 30 min. or until chicken is cooked through and rice is tender.

  • Ingredient Note: We develop our recipes using a 4-to 5-oz. skinless, boneless chicken breast half per serving. However, there are a range of sizes available in-store, from the butcher counter to the meat case and the freezer section. Use whichever you prefer- just follow the recipe as written above for the best result. If you're using larger chicken breasts they may require a little longer cooking time.

    A fantastic dish! I have lived overseas and I found this dish to be true to authentic overseas flavors. It has become one of my favorites. I will be using it frequently for company.

    Mediterranean Chicken & Rice Bake

    This recipe exceeded my expectations! I substituted boneless chicken thighs and they were great! So tender and flavorful. For a real Mediterranean flavor I used Kalamata olives and topped it all with Feta cheese. Excellent.

    The lemon gave it a great twist. So light yet it was filling. I also used brown rice and it still tasted great.
