    can (about 15 ounces) black beans, rinsed and drained

    pound beef for stew, cut into 1/2-inch pieces

How to Make It

Step 1

Mix the water, salsa, cilantro, cumin, onion, corn, beans and beef in a 3 1/2- to 6-quart slow cooker.

Step 2

Cover and cook on LOW for 8 to 9 hours* or until the beef is fork-tender.

    Thickened Soup

    I used some of the water to whir up some beans in my blender to thicken this soup. I also used beef broth for a richer flavor. Soooo good.

    Everything just came together perfectly.

    I really enjoyed this recipe. It was delicious and easy. I used 2 cups of beef broth instead of the water, and added a teaspoon of garlic powder. Excellent!!

    Mexican Black Bean and Beef Soup

    It takes along time to cook but it's worth it! You can use any quality meat. It's almost the consistency of chili. My family loved it.
