    large onion, diced (about 1 cup)

    large jalapeño pepper, seeded and chopped (about 1/2 cup)

    tablespoons tomato paste

  • 1/2

    cup frozen whole kernel corn

    cup black beans, rinsed and drained

  • 1

    can (14.5 ounces) diced tomatoes, undrained or 3 small tomatoes, diced

How to Make It

Heat the oil in a 6-quart saucepot over medium-high heat.  Add the onion and peppers and cook for 2 minutes or until tender-crisp, stirring occasionally.
Stir in the tomato paste, corn, beans, tomatoes, broth and chicken and heat to a boil.  Reduce the heat to low.  Cook for 5 minutes, stirring occasionally.  Serve topped with crushed tortilla chips or strips, if desired.

Recipe Tips

  • Serving Suggestion: Customize your soup with your favorite toppings!  Try diced avocado, sour cream and/or chopped fresh cilantro.  Serve with lime wedges on the side to add a twist of citrus.
  • Alternate Preparation: You can substitute 1 1/4 pounds skinless, boneless chicken breast halves, cut into cubes, for the cooked chicken.  In Step 1, heat the oil over medium-high heat.  Add the chicken and cook until browned, stirring occasionally.  Add the onion and peppers and proceed as directed above.

    Outstanding recipe!

    I once tried a tortilla soup here at a restaurant that I wanted to duplicate here at home. It was so delicious. I came across Swanson's tortilla broth accidentally while shopping and couldn't wait to give it a try. Initially I was unimpressed because I wanted the soup to be thicker and creamy like I had imagined. I'm not one to tweak recipes and usually follow them to a T, however I decided to add a package of shredded sharp cheddar cheese (a little at a time to allow for melting) and I was nervous I would ruin it. It turned out perfectly and was more than pleasantly surprised! I can't understand why people are complaining about the spice; it's a Mexican soup! It is supposed to have some zing! I've altered this by adding only cheese and have perfected it for my taste. Try it and you will not be disappointed. The hardest part of this recipe is browning/shredding the chicken and prepping the pepper and onion. Other than that, this recipe is a cinch. Bold, rich flavors with the texture of the chicken, sweet kernels of corn & sour cream makes this a favorite meal of mine. It is definitely going into my permanent all-time recipes to make. Try it!

    Better than any restaurant

    I found this broth by accident and decided to give the Tortilla soup a try. It is delicious. I like things spicy so I used Rotel tomatoes with chiles to give it a little more heat. It's a beautiful looking soup, smells great and can be addictive.It's my new go to recipe.

    This soup is fantastic........

    I saw the recipe for the Tortilla Soup in an ad paper and decided to make it since I had all of the ingredients except the Swanson Mexican Tortilla Flavor Infused Broth. This soup turned out amazingly wonderful. From the smell to the taste. And it’s very easy to make. I'm going to add Mexican Tortilla Flavor Infused Broth as a pantry staple.
