How to Make It

Step 1

Heat the oven to 350°F.  Line 12 (2 1/2-inch) muffin-pan cups with foil liners.

Step 2

Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat.  Pour off any fat.  Remove the skillet from the heat.

Step 3

Stir in the soup, salsa, corn, macaroni and 3/4 cup cheese.  Spoon about 1/2 cup beef mixture into each muffin-pan cup.  Sprinkle each with about 1 tablespoon remaining cheese.

Step 4

Bake for 15 minutes or until the beef mixture is hot and the cheese is melted.

    Pefect Easy family dinner

I made these another big hit in the house...a few notes my childern like taco's so next time I will put some taco seasoning in with the meat and I will double the salsa because it tastes more like beef and mac&cheese, we like a little more taco taste, but it did not stop them all gone including leftovers in 2 days.

Great taste and easy to make!

For my house hold this was a great tasting twist. But called to make way too many elbow noodles and we have 6 kids to feed

    My kids loved this!

This recipe has a creamy texture, and is not too spicy. I used mild salsa. Older kids woofed them down and asked for seconds. Even my 4 year old ate a whole one, and felt good about finishing it! Takes a little longer to prepare, but the effort is worth it. Could be a nice change from pizza for birthday parties.
