large onion(about 1 cup)
yellow, orange and/or red bell pepper, seeded and cut up
large cucumber, peeled, seeded and cut up
clove garlic, minced
cups V8® Mint & Lime Vegetable Juice
tablespoons olive oil
tablespoon apple cider vinegar
teaspoon kosher salt
mango, peeled, pitted and finely chopped (about 2 cups)
tablespoons chopped fresh cilantro
Place the onion, peppers and cucumber into a food processor. Cover and process until the vegetables are finely chopped. Remove and reserve half the vegetables.
Add the garlic, vegetable juice, oil, vinegar and salt to the vegetables in the food processor. Cover and process until the mixture is smooth.
Stir the blended mixture, reserved vegetables, mango and cilantro in a large bowl. Cover and refrigerate for 1 hour.
