tablespoon olive oil
pound Italian pork sausage, casing removed
large onion, minced (about 1 cup)
ounces kale leaves, chopped (about 8 cups)
cloves garlic, peeled and thinly sliced
teaspoon crushed red pepper
jar (14.5 ounces) Prego® Alfredo Artisan Four Cheese Sauce or Prego® Homestyle Alfredo Sauce
cups Swanson® Natural Goodness® Chicken Broth
ounces uncooked penne pasta (about 3 cups)
tablespoon lemon juice
teaspoon grated lemon zest
cup toasted pine nuts (optional)
Heat the oil in a 6-quart saucepot over medium-high heat. Add the sausage and cook until well browned, stirring often to separate meat. Pour off any fat.
Add the onion, kale, garlic and crushed red pepper and cook for 8 minutes or until the kale is tender, stirring occasionally.
Stir in the sauce, broth and penne and heat to a boil. Reduce the heat to medium. Cook for 15 minutes or until the penne is tender, stirring occasionally. Stir the lemon juice and zest into the penne mixture and season to taste. Sprinkle with the pine nuts, if desired, before serving.
