    tablespoon olive oil

    pound skinless, boneless chicken breast halves (about 4 breast halves)

    cup Pace® Picante Sauce

  • 1

    teaspoon Italian seasoning, crushed

  • 1

    medium green pepper, cut into 1-inch pieces (about 1 cup)

  • 1 1/4

    ounces chopped pepperoni (about 1/3 cup)

  • 4

    tablespoons shredded part skim mozzarella cheese for garnish

  • 1

    cup regular long grain white rice, cooked according to package directions (about 3 cups)

How to Make It

Step 1

Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides. Remove the chicken from the skillet and set aside.

Step 2

Stir the picante sauce, Italian seasoning, green pepper and pepperoni in the skillet and heat to a boil. Return chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. Garnish with the cheese and serve with the rice.

    Tasted like Chicken Ciaccatore

    Tasted good but the mozzarella didn't seem to fit with the Picante. Next time I will try shredded cheddar. My kids loved it and they are usually picky.

    This was different and very tasty!

    I added some sliced onions and shallots to give it a little more flavor. It was a hit with my husband! I will put this recipe on my favorite dish list....

    Surprisingly simple and tasty

    This was so simple to make! I couldn't decide if it was going to be Mexican or Italian when reading the recipe. In the end, it didn't matter because it was very flavorsome. So quick to make, it's great for weeknights when everyone is in a hurry!

    My husband couldn't get enough of it and loves it. He tries to be low carb, so we just eliminated the rice and it was great. I did salt and pepper the chicken before cooking it, but it doesn't need much. He can't wait for me to cook it again!

    Panhandle Pepperoni Chicken

    So easy to make, my husband said he would eat this chicken dish again, no problem!!! Also, I used Salsa Sauce instead ot Picante, certainly did the trick and more sauce for the rice.
