pounds ground beef or ground meat loaf mix (beef, pork, veal)
tablespoons dry bread crumbs
teaspoon garlic powder
green onion, chopped (about 1/2 cup)
cup shredded Cheddar cheese (about 4 ounces) (amount divided in recipe below)
tablespoons olive oil or vegetable oil
jars (16 ounces each ) Pace® Picante Sauce
Season the beef with salt and pepper. Thoroughly mix the beef, bread crumbs, milk, eggs, garlic powder, green onions and 2 tablespoons cheese in a large bowl. Shape the mixture firmly into 30 (1 1/2-inch) meatballs.
Heat the oil in a 12-inch nonstick skillet over medium-high heat. Add the meatballs and cook until well browned on all sides (for better browning, add and cook in two batches). Pour off any fat.
Add the picante sauce to the meatballs and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the meatballs are done. Stir in the remaining about 3/4 cup cheese and cook for 1 minute or until the cheese is melted. Sprinkle with additional chopped green onions, if desired.
