    easy meal for workday lunches

This recipe not only makes chicken salad easy, but it lasted my husband and I for several lunches at work. I can be a chicken salad snob, so to add a little more flavor and prevent the cream of celery from becoming overwhelming, I added about 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder. If it still tastes like something's missing, try adding 1/2 teaspoon Italian seasoning, 1/4 teaspoon salt, and/or 1/4 teaspoon chili powder for a little zip without getting spicy. You can also give chicken salad a seasonal flair in fall by adding chopped walnuts and sliced apple in place of tomato. I separated the mix into 6 individual serving containers for lunchboxes and served in sliced kaiser rolls.
