This fabulous frittata features eggs, diced potatoes, pico de gallo and shredded cheese, all baked together until the eggs and set and the cheese are melted.

    cups frozen diced hash brown potatoes

    ounces pico de gallo(1 cup)

  • 4

    ounces finely shredded Mexican blend cheese(about 1 cup)

How to Make It

Step 1

Heat the oven to 350°F. Heat the oil in a 10-inch oven-safe nonstick skillet over medium heat. Add the potatoes and cook for about 3 minutes.

Step 2

Beat the eggs, pico de gallo and cheese in a medium bowl with a fork or whisk. Pour the egg mixture over the potatoes and cook for 3 minutes or until the eggs are beginning to set.

Step 3

Place the skillet in the oven and bake for 20 minutes or until the eggs are set. Cut the frittata into 6 wedges.

    Great recipe, just needed a little more!

    I'm not a big Frittata fan, but this came out great! I used a little more potatoes, and fried them a little longer. I used chunky salsa instead of pico (hate that stuff). I added onions and sausage to the mix, and I topped with some bacon crumbles. Love it! Best Frittata I've ever made!

    Pico de Gallo Frittata

    This recipe was very easy the only thing I had trouble with was finding red pepper sauce. I couldn't find it anywhere so I just replaced it with this salsa type of stuff like Rotel and added some chopped onion and peppers.

    Added onion and baby portobello mushrooms....a little hot sauce, and bingo!
