pounds skinless, boneless chicken breast halves, cut into 1 1/2-inch pieces
tablespoons vegetable oil
large red bell pepper, cut into thin 2-inch long strips (about 2 cups)
green onion, cut into 1-inch pieces
tablespoon minced fresh ginger root
cup Pace® Citrus Pineapple Salsa
Season the chicken with the salt.
Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the pepper and green onions and stir-fry for 3 minutes or until tender-crisp. Add the ginger and stir-fry for 30 seconds. Remove the vegetable mixture from the skillet.
Heat the remaining oil in the skillet. Add the chicken and stir-fry for 7 minutes or until cooked through. Return the vegetables to the skillet. Stir in the salsa and cook until the mixture is hot and bubbling.
