    tablespoons butter

  • 1

    small onion, chopped (about 1/4 cup)

  • 3/4

    cup Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth

    tablespoon packed brown sugar

  • 1/4

    teaspoon dried thyme leaves, crushed

  • 1

    pumpkin or calabaza squash (about 2 1/2 pounds), peeled, seeded and cut into 1-inch pieces (about 5 to 6 cups)

    medium Macintosh apple, peeled, cored and cut into 1-inch pieces

How to Make It

Heat the butter in a 4-quart saucepan over medium-high heat. Add the onion and cook until the onion is tender-crisp. Stir the broth, brown sugar, thyme and pumpkin in the saucepan and heat to a boil.  Reduce the heat to low.  Cover and cook for 10 minutes or until the pumpkin is tender. Stir the apples in the saucepan.  Cook for 5 minutes or until the apples are tender.  Mash the pumpkin mixture, adding additional broth, if needed, until desired consistency.  Season to taste.

    Puts "Thanks" in Thanksgiving

    I chose this recipe so I could use the food items I already had in my home. In the end, I guess I invented a new recipe with all my substitutions but it was pretty close to the original. Substituting vegetable oil for butter, 1/8 C reconstituted dried onion flakes for 1 small chopped onion, 1/4 C beef (or vegetable) broth for 3/4 Swanson chicken broth, a 1 lb 13 oz can of pumpkin puree for 2 1/2 lbs of fresh simmered pumpkin chunks, 1 small single serving container of sweetened regular apple sauce for 2 simmered Macintosh apple slices, and adding 1 tablespoon of pure maple syrup, 1/2 C chopped pecans mixed in and 3/4 C whole pecans sprinkled on top, this dish was a hit at my Thanksgiving church fellowship meal today at the Sabbath worship service. Most of the people were attracted by the pecans on top which I added to make this plain dish look festive. After reading the other reviews, I tasted the results of the original recipe and added syrup and nuts for more flavor and texture. Perfection!

    MAYBE......

    I'm not sure how much I enjoyed this recipe. I had to use canned pumpkin, maybe that made the difference?? Anyway, although the spices used were obvious, it still seemed like a bland dish to me.....that is to say "no excitement" for it like my trafitional sweet potato dish always generates. too much like just eating pumpkin pie filling all by itself.

    WHAT A WAY TO USE YOUR PUMPKIN FROM HALLOWEEN!!

    I actually took this recipe to a pot luck this past weekend, EVERYONE WANTED THE RECIPE!! You can adapt this to feed a whole lot of people!! My increased size addition to the potluck, fed about 20 people!!
