    Easy Quick dinner

Have made this a couple times. I leave out the salsa because my family does not like. I add in a can of Cheddar Cheese soup along with the tomato and a packet of taco seasoning. It is flavorful but not overly spicy. Also serve with tortilla chips crushed on top with some shredded cheese.

    Great easy meal

To make it healthy, I used ground turkey instead of hamburger and used gluten free chips and my kids couldn't eat enough of it. They loved it. This will be a family favorite

    Great recipe

My family LOVES this meal!! I have made it several times and I have added either pinto beans or black beans along with all the other ingredients and it is still amazing!. I believe the beans add more filling to the meal.

    Family friendly meal.

This was a big hit with my kids. My kids and I ate it with tortilla chips and my husband wrapped it in a flour tortilla. I used ground turkey but it would have been better with ground beef. The turkey was a little bland.

    Healthy Substitutions

The recipe sounds tasty, I want to make it today. But, just to cut down on the cholesterol and saturated fat, I think I would use 2 cups whole pinto beans mashed a little bit or a can of fat-free refried beans in place of the hamburger. Then, I would use brown rice that is already cooked to give it some added fiber and tasty texture. So, the extra water on the recipe wouldn't be necessary. I would also use fresh avocado slivers to replace the cheese. Yummy for a healthy heart and body!
