pound boneless, skinless chicken breast, cut into 1-inch pieces (buy pre-cut to save prep time)
teaspoon Italian seasoning
tablespoon olive oil
jar (24 ounces) Prego® Traditional Italian Sauce or Prego® Tomato Basil Garlic Italian Sauce
ounces (about 2 cups) uncooked rotini (spiral) pasta (the pasta cooks right in the skillet- a time saver and one less pot to clean)
cup grated Parmesan cheese
cup shredded mozzarella cheese
Season the chicken with salt and pepper and sprinkle with the Italian seasoning. Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until done, stirring occasionally. Remove the chicken from the skillet, cover and keep warm.
Stir the sauce, rotini and water in the skillet and heat to a boil. Reduce the heat to medium-low. Cover and cook for 10 minutes or until the rotini is tender, stirring occasionally. Stir in the cooked chicken. Season to taste.
Sprinkle with the Parmesan and mozzarella cheeses (if you like, cover and let stand for 5 minutes to melt the cheese).
