    cup Swanson® Chicken Broth or Swanson® Natural Goodness® Chicken Broth

  • 1/2

    cup Pace® Picante Sauce - Medium

  • 1/2

    cup uncooked quinoa, rinsed

  • 2/3

    cup frozen whole kernel corn, thawed

  • 2/3

    cup rinsed drained canned black beans

  • 2/3

    cup diced avocado

  • 2/3

    cup grape tomatoes cut in quarters

  • 2

    green onion, sliced (about 1/4 cup)

  • 1

    cooked boneless, skinless chicken breast, sliced

  • 2

    tablespoons chopped fresh cilantro

How to Make It

Step 1

Heat the broth, picante sauce and quinoa in a 1-quart saucepan over high heat to a boil.  Reduce the heat to low.  Cover and cook for 12 minutes or until the quinoa is tender and the liquid is absorbed.

Step 2

Divide the quinoa mixture between 2 bowls.  Divide the corn, beans, avocado, tomatoes and green onion between the bowls.  Top with the chicken.  Sprinkle with the cilantro.
