teaspoon olive oil
large onion, chopped (about 1 cup)
medium green onion, chopped (about 1/4 cup)
cup chopped green pepper
can (10 1/2 ounces) Campbell’s® Condensed Chicken Broth
can (about 10 ounces) diced tomatoesand green chiles
teaspoon Freshly ground black pepper
cloves garlic, minced
teaspoons dried parsley flakes
teaspoon dried thyme, crushed
slices bacon, cooked and crumbled
pound ham, diced
cans (about 15 ounces each ) great northern beans
cup long grain white riceor regular brown rice, cooked according to package directions (about 3 cups)
Heat the olive oil in a 10-inch skillet over medium heat. Add the onion, green onions and green pepper and cook until they're tender.
Add the broth, tomatoes, black pepper, garlic, parsley, bay leaves, thyme, bacon and ham and heat to a boil. Reduce the heat to low and cook for 45 minutes. Add the beans for the last 5 minutes of cooking time. Remove the bay leaves. Stir in the rice and let stand for 5 minutes.
