This slowly simmered dish packs a lot of flavor...onions, peppers, tomatoes, ham and bacon ensure great taste in every bite...and the rice cooks right in the same skillet!

    large onion, chopped (about 1 cup)

    medium green onion, chopped (about 1/4 cup)

    cup chopped green pepper

    can (10 1/2 ounces) Campbell’s® Condensed Chicken Broth

    can (about 10 ounces) diced tomatoesand green chiles

    teaspoon Freshly ground black pepper

    cloves garlic, minced

  • 2

    teaspoons dried parsley flakes

    bay leaf

  • 1/2

    teaspoon dried thyme, crushed

    slices bacon, cooked and crumbled

    pound ham, diced

  • 2

    cans (about 15 ounces each ) great northern beans

    cup long grain white riceor regular brown rice, cooked according to package directions (about 3 cups)

How to Make It

Heat the olive oil in a 10-inch skillet over medium heat. Add the onion, green onions and green pepper and cook until they're tender. Add the broth, tomatoes, black pepper, garlic, parsley, bay leaves, thyme, bacon and ham and heat to a boil. Reduce the heat to low and cook for 45 minutes. Add the beans for the last 5 minutes of cooking time. Remove the bay leaves. Stir in the rice and let stand for 5 minutes.

    Outstanding!

    Hi took this recipe and modified it and made a soup out of it. I used a can of Campbells Golden Cream of Mushroom Roasted Garlic soup and put that in the pot with some sauteed veggies (onion, squash, & celery) and poured in the chicken stock and Cream of Mushroom soup after the veggies were soft and tender. Put in ham chunks (leftovers from ham dinner) and used the other ingredients called for this recipe and simmered for about 30 minutes! It was very delicious!

    one word delicious!!!

    This was the best rice recipe i've ever made. I added cut okra to it and it was awesome. My fiance' loved it!
