    ounces soft goat cheese, crumbled

    tablespoon lemon juice

  • 1

    teaspoon grated lemon zest

How to Make It

Step 1

Set the oven to 425°F. Spray a roasting pan with vegetable cooking spray. 

Step 2

Stir the asparagus and oil in the pan. Season the asparagus as desired. Add the broth.

Step 3

Roast the asparagus for 20 minutes or until tender, stirring once during cooking. Top with the cheese, lemon juice and lemon zest.

    An elegant and easy recipe

    I was impressed by the flavors as well as the presentation. I did, however, only use half the amount of cheese and lemon. If you like asparagus, this recipe is definitely for you.
