    large onion, chopped (about 1 cup)

    large red or green pepper, chopped (about 2 cup)

    tablespoons chopped cilantro

    pound beef flank steak

    tablespoon cider vinegar

    clove garlic, minced

  • 1/8

    teaspoon cracked black pepper

    can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup

How to Make It

Step 1

Place the onion, chopped pepper and cilantro in the bottom of a 4 to 6-quart slow cooker.  Top with the beef.  Add the vinegar, garlic, black pepper, soup and water.

Step 2

Cover and cook on HIGH for 5 hours or until the beef is fork-tender, stirring only once or twice during the cooking time.

Step 3

Remove the beef to a cutting board.  Using two forks, shred the beef.  Return the beef to the cooking liquid.  Serve the beef mixture with the rice.

    Good if you like sweet & savory

    This recipe is really good if you like sweet! If not, I'd suggest substituting with diced tomatoes and tomato sauce instead of tomato soup. I also used a thin chuck roast instead of flank steak! It's really good!!
