The name Ropa Vieja translates as "old clothes", but the flavor is fresher and lighter than a regular old stew. Using the convenience of a slow cooker, Ropa Vieja is a great make-ahead dish, especially on those days when you are overloaded with household chores...or laundry!

large onion, chopped (about 1 cup)
large red or green pepper, chopped (about 2 cup)
tablespoons chopped cilantro
pound beef flank steak
tablespoon cider vinegar
clove garlic, minced
teaspoon cracked black pepper
can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Tomato Soup
cups hot cooked white rice
Place the onion, chopped pepper and cilantro in the bottom of a 4 to 6-quart slow cooker. Top with the beef. Add the vinegar, garlic, black pepper, soup and water.
Cover and cook on HIGH for 5 hours or until the beef is fork-tender, stirring only once or twice during the cooking time.
Remove the beef to a cutting board. Using two forks, shred the beef. Return the beef to the cooking liquid. Serve the beef mixture with the rice.
