cups Swanson® Chicken Broth or Swanson® Certified Organic Chicken Broth or Swanson® Natural Goodness® Chicken Broth
cup uncooked long grain white rice
can (16 ounces) Campbell's® Pork and Beans
cup Pace® Chunky Salsa - Mild
cup cubed cooked chicken
Heat the broth in a 2-quart saucepan over medium-high heat to a boil. Stir the rice in the saucepan. Reduce the heat to low. Cover and cook for 20 minutes or until rice is done.
Stir the beans, salsa and chicken in the saucepan and heat through.

Made this soup and the flavor was very good. Will give this recipe to a friend. I didn't add any new ingredients to it but did put more of all ingredients so as to last for several days. The salsa and beans of course is what really flavors the soup. I stuck to mild salsa but I'm sure the hotter ones will work out just fine. Next time I might add just a few vegies. (Trying to eat healthier) All in all this is a wonderful quick soup that tastes like more time was spent on preparing it. I see myself making this frequently during winter. Need more meals like this.

This is a very simple recipe to follow and the result is delicious. Although some changes that I will for sure use next time are, adding half a can of corn and half a can of black beans. I will still use the pork and beans, but the beans' texture is kind of gone when you add them to the soup. I like a firmer bean. Also, I used about 2 ounces of plain cream cheese, but next time I will use some that Kraft cooking creme in Southwestern flavor. That should add more flavor and body. :)
