    pound diced skinless, boneless chicken breast halves

    tablespoon vegetable oil

    small avocado, pitted, peeled and diced (about 1/2 cup)

    teaspoon lime juice

  • 1

    medium red bell pepper, diced (about 1/2 cup)

    cup sour cream

How to Make It

Step 1

Season the chicken as desired.  Heat the oil in a 12-inch skillet over medium-high heat.  Add the chicken and cook for 5 minutes or until well browned and cooked through, stirring occasionally.  Stir in 1/2 cup salsa verde and cook until hot.

Step 2

Place the avocado into a medium bowl.  Add the lime juice and toss to coat.

Step 3

Divide the chicken mixture, pepper, avocado mixture, sour cream and remaining 1/2 cup salsa verde among the tortillas.  Fold the tortillas around the filling.

Recipe Tips

  • Easy Substitution: Substitute 3 cans (4.5 ounces each) Swanson® Premium White Chunk Chicken Breast in Water, drained, for the chicken, omit the oil and skip the first part of Step 1.

    Salsa Verde Chicken Wraps

    I love these wraps. I substituted half a large red onion for the red pepper, otherwise, I kept to the recipe. It was very good, filling and easy!

    It was a nice change instead of a sandwich for lunch, it was very healthy and fresh tasting. I left the recipe as is and it was delicious.
