cup finely crushed tortilla chips (about 2 1/4 ounces)
green onion, minced (about 1/2 cup)
Set the oven to 350°F. While the oven is heating, season the beef as desired.
Thoroughly mix 3/4 cup salsa verde, the beef, egg, tortilla chips and green onions in a large bowl. Shape the mixture firmly into 48 mini meatballs.
Place the meatballs into a 15x10x2-inch baking dish.
Bake for 10 minutes or until the meatballs are cooked through. Serve with the remaining salsa verde.
