    tablespoons butter

    small onion, chopped (about 1/4 cup)

    teaspoon garlic powder or 2 cloves garlic,minced

    tablespoons grated Parmesan cheese

    tablespoons fresh parsley or 2 teaspoons dried parsley flakes

How to Make It

Step 1

Heat the oven to 425°F.  Remove the stems from the mushrooms. Chop enough stems to make 1 cup.

Step 2

Heat 2 tablespoons butter in a 2-quart saucepan over medium heat until it's melted.  Brush the mushroom caps with the butter and place, top-side down, into a 3-quart shallow baking pan.

Step 3

Heat the remaining butter in the saucepan until it's melted.  Stir in the chopped mushroom stems, onion and garlic powder and cook until the mushrooms are tender.  Stir in the cream cheese, Parmesan cheese and parsley.  Add the stuffing and mix lightly.  Spoon about 1 tablespoon stuffing mixture into each mushroom cap.

Step 4

Bake for 10 minutes or until the filling is hot.

Recipe Tips

  • Tip:  To make ahead, prepare as directed above, but do not bake. Cover and refrigerate for up to 24 hours.   Bake as directed above.

    Its really QUICK! Great for short notice of unexpected guests!

    I had made this once before so I knew in advance that I'd have to double the recipe this time, if I wanted to have any leftovers for myself. I didn't have any Pepperidge Farm Herb Seasoned Stuffing, and I had no time to go shopping. So alright, I DID cheat JUST a wee bit because I used poultry seasoning instead. Hah! So sue me... Apparently they liked them anyway, becuase they ATE ALL 50 of them! Siggghhhh. I suppose I'll have to triple the recipe next time.
