    cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth

  • 2

    medium potato, cut into cubes (about 2 cups)

  • 1

    cup cooked beef cubes

  • 3

    cups V8® 100% Vegetable Juice

  • 1

    cup cut up canned whole tomatoes

  • 1

    bag (16 ounces) frozen mixed vegetables (carrots, green beans, corn, peas)

  • 1/4

    teaspoon dried thyme, crushed

How to Make It

Step 1

Heat the broth and potatoes in a 4-quart saucepan over medium-high heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the potatoes are tender.

Step 2

Stir the beef, vegetable juice, tomatoes, vegetables, thyme and 1/8 teaspoon ground black pepper in the saucepan. Cover and cook for 15 minutes or until the vegetables are tender.

    I Use A Slightly Different Variation

    I use V8, Cooked Lean Stew Beef, Canned Crushed Tomatoes, Lots of Red Potatoes, Onions, a bit of Little Parsley Flakes and Frozen Vegetables. I cook the meat right in the V8 Juice until tender. I add the cubed red potatoes then chopped onion. I add a large can of crushed tomatoes and parsley. After the potatoes and meat are tender I cook the frozen vegetables first then add to the pot. I cook it on Medium until it boils then I cook it on Medium-Low a few hours. I never use exact amounts. I throw in a little of everything to look and taste. It comes out great every time! The Secret is the V8 !

    "Cover and cook for 5 minutes or until the potatoes are tender." How do you get potatoes tender in 5 minutes? Unless the dice is really tiny or is it some other trick? I think the trick must really be found in the part of the instruction that says "until the potatoes are tender" Just an observation from an old guy with too much time on his hands who enjoys getting all the recipes and enjoys all of them. Good job and keep them comming. Thanks. Wes

    really easy to make I added more to it like corn onions and thyme rosemary and minced garlic really really good!!

    simple and kid friendly

    This soup is "everybody" friendly because you can use any type of veges your family likes. My boys aren't too picky, but i was able to use whatever veges i had in the freezer. Also, chicken or vegetable broth works just as well as beef broth. ENJOY! We did!

    Simple and easy to make

    I was amazed how easy it was to make homemade soup. I added some spices to my beef like cummins, chili powder and seasoning salt, which really bring out the taste in the soup.
