    cups Swanson® Beef Broth or Swanson® 50% Less Sodium Beef Broth

  • 2

    medium potato, cut into cubes (about 2 cups)

  • 1

    cup cooked beef cubes

  • 3

    cups V8® V8® Original

  • 1

    cup cut up canned whole tomatoes

  • 1

    bag (16 ounces) frozen mixed vegetables (carrots, green beans, corn, peas)

  • 1/4

    teaspoon dried thyme, crushed

How to Make It

Heat the broth and potatoes in a 4-quart saucepan over medium-high heat to a boil.  Reduce the heat to low.  Cover and cook for 5 minutes or until the potatoes are tender. Stir the beef, vegetable juice, tomatoes, vegetables, thyme and 1/8 teaspoon ground black pepper in the saucepan. Cover and cook for 15 minutes or until the vegetables are tender.
Step 1

    I Use A Slightly Different Variation

    I use V8, Cooked Lean Stew Beef, Canned Crushed Tomatoes, Lots of Red Potatoes, Onions, a bit of Little Parsley Flakes and Frozen Vegetables. I cook the meat right in the V8 Juice until tender. I add the cubed red potatoes then chopped onion. I add a large can of crushed tomatoes and parsley. After the potatoes and meat are tender I cook the frozen vegetables first then add to the pot. I cook it on Medium until it boils then I cook it on Medium-Low a few hours. I never use exact amounts. I throw in a little of everything to look and taste. It comes out great every time! The Secret is the V8 !

    really easy to make I added more to it like corn onions and thyme rosemary and minced garlic really really good!!

    simple and kid friendly

    This soup is "everybody" friendly because you can use any type of veges your family likes. My boys aren't too picky, but i was able to use whatever veges i had in the freezer. Also, chicken or vegetable broth works just as well as beef broth. ENJOY! We did!

    Simple and easy to make

    I was amazed how easy it was to make homemade soup. I added some spices to my beef like cummins, chili powder and seasoning salt, which really bring out the taste in the soup.

    Savory Vegetable Beef Soup

    First off I HATE Bloody Marys and honestly didn't think that this would taste like a Bloody Mary when I made it, but it truly did. If you don't like the taste of a Bloody Mary please don't make this If you do like Bloody Mary you can still make it but I'd give it some spice because it's really kind of bland if you ask me. Other than that it's really easy to make not to mention very healthy for you, however your taste buds might be mad at you as like I said before it needs a little more flavor.
