pounds ground turkey or ground chicken
ounces frozen riced cauliflower, thawed and very well drained (best to roll up in clean dish towel or paper towel and squeeze all the liquid out)
cup Italian seasoned bread crumbs
cup grated Parmesan cheese
teaspoon garlic powder
jar (24 ounces) Prego® Traditional Italian Sauce
pound small potato, cut into quarters or baby potatoes, cut in half
ounces trimmed green beans or frozen green beans
tablespoon olive oil
Heat the oven to 425°F. While the oven is heating, season the turkey with salt and pepper. Thoroughly mix the turkey, cauliflower, bread crumbs, egg, 3 tablespoons cheese, the garlic powder and 1/3 cup sauce in a large bowl. Firmly shape the turkey mixture into 6 mini meat loaves.
On a rimmed baking sheet, place aluminum foil to cover half the sheet, folding the edges up about 1/2-inch (this will keep the sauce from running onto the other half of the baking sheet). Spread 1/2 cup sauce on the foil. Place the meat loaves onto the sauce. Top with the remaining sauce.
Place the potatoes and green beans on the other half of the baking sheet. Drizzle with the olive oil and season with salt and pepper.
Bake for 40 minutes or until the meat loaves are done. Sprinkle with the remaining cheese. Serve the meat loaves with the potatoes and green beans.
