    can (19 ounces) Campbell's® Chunky™ Beef & Bean Roadhouse Chili

  • 1/2

    cup water

  • 1/2

    cup Pace® Picante Sauce - Medium

  • 1/2

    cup frozen whole kernel corn

  • 1

    package (8 1/2 ounces) corn muffin mix

How to Make It

Step 1

Heat the oven to 400°F.

Step 2

Cook the beef in a 10-inch skillet over medium-high heat until well browned, stirring often to separate meat.  Pour off any fat.

Step 3

Stir the chili, water, picante sauce and corn in the skillet.  Spoon the beef mixture into a 2-quart shallow baking dish.

Step 4

Mix the corn muffin mix according to the package directions. Pour the batter over the beef mixture.

Step 5

Bake for 20 minutes or until the topping is golden brown.

    Excellent Tex Mex dish for our cafeteria!

    Recipe was very easy, which I added a can of Rotel's diced tomatoes with green chilis. I made it for our college cafeteria and it went over as a huge success, the students ask to have it back for another day!

    Shortcut Tamale Pie

    For quick and easy it's at the top. A Hint or two: use an iron skillet they go right from the stove top to the oven (Only one pan to clean.). Use "Mexi-Corn" vs whole kernel and definitely have some extra Pace in a bowl beside some grated cheese for an added topping when it comes out of the oven and before serving. Yum Yum. Might want to make a double batch this is good !

    I've made this recipe and have to say that my whole family (yes even my 3 year old) loved it !! It's a nice change from meat and potatoes.

    Instead of the Fiesta Chili Beef Soup, I used Creamy Ranchero Tomato Soup. My family loved it.
