Shrimp Creole


This savory shrimp and rice dish gets kicked up with garlic and ground red pepper to make a down-home favorite in less than an hour.

    tablespoon cornstarch

    cups Campbell's® Tomato Juice

  • 1

    tablespoon butter

  • 1

    medium green pepper, diced (about 1 cup)

  • 2

    stalks celery, sliced (about 1 cup)

  • 1/2

    teaspoon dried oregano leaves, crushed

  • 1

    medium onion, chopped (about 1/2 cup)

  • 1/4

    teaspoon garlic powderor 1 clove garlic minced

  • 1/8

    teaspoon ground red pepper

  • 1

    pound medium shrimp, shelled and deveined

  • 1

    cup long grain white rice, cooked according to package directions (about 3 cups)

How to Make It

Step 1

Stir the cornstarch and 1/2 cup tomato juice in a small bowl with a fork or whisk until the mixture is smooth and set the mixture aside.

Step 2

Heat the butter in a 10-inch skillet over medium heat. Add the green pepper, celery, oregano, onion, garlic powder and red pepper and cook until the vegetables are tender-crisp.

Step 3

Stir the remaining tomato juice in the skillet. Cover and cook for 5 minutes.

Step 4

Stir the cornstarch mixture and add it to the skillet. Add the shrimp. Cook until the mixture boils and thickens and the shrimp turn pink, stirring constantly. Serve over the rice.

    Shrimp Creole

    Everyone loved this tonight, I started at 4:20and dinner was on the table by 5:30. the only request was that there was not enough sauce. I will double up next time.

    I got this recipe years ago out of a campbells book. Now it is a standard request at all family specials. Everyone loves this dish.
