    ounces shrimp (16 to 20 count per pound), peeled, deveined and tails removed

    tablespoon olive oil

  • 2

    cloves garlic, minced

  • 1/8

    teaspoon crushed red pepper

  • 1

    cup Swanson® Chicken Broth or Swanson® Natural Goodness® Chicken Broth

  • 2

    cups baby spinach

  • 1/2

    cup cooked quinoa

  • 1

    tablespoon lemon juice

  • 1

    green onion, sliced (about 2 tablespoons)

How to Make It

Step 1

Season the shrimp as desired.  Heat the oil in a 12-inch skillet over medium-high heat.  Add the shrimp and cook for 4 minutes or until cooked through, stirring occasionally.  Remove the shrimp from the skillet, cover and keep warm.

Step 2

Add the garlic and red pepper to the skillet and cook and stir for 1 minute.  Add the broth and heat to a boil.  Add the spinach, quinoa and lemon juice and cook for 1 minute or until the spinach is wilted.  Serve the broth mixture in bowls and top with the shrimp and green onion.

Recipe Tips

  • Ingredient Note: If you don't have cooked quinoa on hand, you can substitute another leftover cooked grain like rice, brown rice or farro.
  • For Chicken & Quinoa Broth Bowls, substitute 10 ounces skinless, boneless chicken breast, cut into thin strips, for the shrimp.

    What a delicious, light tasting soup! I made it for a small dinner party as a starter. My only concern was I misread that it only serves 2 people ... luckily I had extra supplies on hand so didn't suffer any embarrassment... but I DID ACCEPT all PRAISES! Thank you Campbell's for another wonderful recipe!
