cups V8® Mint & Lime Vegetable Juice
cup uncooked long grain white rice
cup peeled chopped mango
Heat vegetable juice in a 3-quart saucepan over medium-high heat to a boil. Stir in the rice. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender and the vegetable juice is absorbed.
Stir in the mango. Let stand for 5 minutes.
