Our Skillet Mushroom Meatloaf recipe makes it so easy to make meatloaf any night of the week. 6 ingredients means that prep is fast. We’ve shaped our meatloaf mixture into 4 smaller loaves and cooked them in a skillet, so they cook in just 20 minutes. We mix a little of our savory and delicious mushroom soup into the meat mixture to add flavor and moisture and then pour the rest over the meatloaves to create a delicious sauce.

pound 93% lean ground beef
cups thawed frozen riced cauliflower
cup plain dry bread crumbs
small onion, diced (about 1/3 cup)
egg white or 1 whole egg
can (10 1/2 ounces) Campbell's® Mushroom Cooking Soup
cup ketchup
Season the beef with salt and pepper, if desired. Thoroughly mix the beef, cauliflower, bread crumbs, onion, egg white and 1/4 cup soup in a large bowl. Shape the beef mixture firmly into 4 mini loaves. Stir the remaining soup and the ketchup in the soup can.
Heat a 12-inch nonstick skillet over medium heat. Add the meat loaves. Cover and cook for 10 minutes or until well browned on all sides (let cook for at least 5 minutes before turning to prevent sticking). Pour off any fat.
Pour the soup mixture over the meat loaves. Cover and cook for 5 minutes or until the meat loaves are cooked through, stirring the soup mixture occasionally. Spoon the soup mixture over the meat loaves before serving.

Made this with a can of the new mushroom soup for cooking it was excellent. The only problem I am having trouble finding the soup again. My husband and my daughter who is a picky eater loved it. You couldn’t tell I had used vension. I didn’t have any cauliflower but it came out great and tasty. I didn’t pack the meatloves hard enough so a couple of them fell apart. I will definitely make this again
