    small red bell pepper, chopped (about 1/2 cup)

    small tomato, diced (about 1/2 cup)

  • 1

    can (8 3/4 ounces) whole kernel corn, drained

  • 1/2

    pound skinless, boneless chicken breast halves, cut into 1/2-inch pieces

  • 1

    can Campbell's® Condensed Cream of Chicken Soup or Campbell's® Condensed 98% Fat Free Cream of Chicken Soup

  • 1 1/2

    cups water

  • 1

    teaspoon cumin

  • 1/2

    teaspoon ground coriander

  • 1/2

    teaspoon garlic powder

  • 1/2

    teaspoon chili powder

  • 1

    can (about 4 ounces) chopped green chiles

  • 1/4

    teaspoon seeded chopped jalapeño pepper

  • 2

    corn tortilla (6-inch), cut into strips

  • 1/2

    cup shredded Cheddar cheese

  • 1/4

    cup chopped cilantro

How to Make It

Stir the red pepper, tomato, corn and chicken in a 3 1/2-quart slow cooker. Stir the soup, water, cumin, coriander, garlic powder, chili powder, chiles and jalapeño pepper, if desired, in a small bowl.  Stir the soup mixture in the cooker. Cover and cook on LOW for 4 to 5 hours or until the chicken is cooked through. Stir in the tortillas, cheese and cilantro. Cover and cook for 30 minutes. Serve with additional cheese, if desired.
Step 1

Step 3

Cover and cook on LOW for 4 to 5 hours or until the chicken is cooked through.

Step 4

Stir in the tortillas, cheese and cilantro. Cover and cook for 30 minutes. Serve with additional cheese, if desired.

    Super Easy and Excellent

    I made a double batch. I changed it up a bit by adding 1 can of black beans and using 1 can of creamed corn (Of the 2 cans required) and using chicken broth instead of water. It made a beautiful creamy tortilla soup with lots of color and tasted excellent. It's gone in to our "Favorites". A perfect meal for the cooler seasons and a breeze to make.

    Slow Cooker Chicken Chile Tortilla Soup

    Sooo yummy! Similar to enchilada soup I've made but without all the tomato to upset indigestion. I used Chipotle Chili Powder, mild Jalapenos, left out the coriander (didn't have any) and added some black beans and onions. Will be a new addition to my meals for sure!

    Slow Cooker Chicken Chile Tortilla Soup

    Even the picky eaters in my house like this recipe. It is great with some tortilla chips served on top while eating (just like you would do with crackers). This soup is amazing!!!
