How to Make It

Place the onion into a 6-quart slow cooker.  Cut the pork in half lengthwise and season with salt and pepper, if desired.  Sprinkle the pork with the chili powder.  Place the pork into the cooker.  Stir the soup and vinegar in a small bowl.  Pour the soup mixture over the pork. Cover and cook on HIGH for 4 to 5 hours or until the pork is fork-tender.  Using 2 forks, shred the pork in the cooker.  Serve the pork mixture on the buns.

Recipe Tips

  • For smoky flavor, substitute 1 tablespoon applewood rub seasoning or 2 teaspoons smoked paprika for the chili powder.  Or omit the chili powder and stir in 1 tablespoon chopped chipotle chile in adobo with the soup.
  • Try serving the pork on the buns, topped with coleslaw.  You can buy it prepared, or mix 1 1/2 cups coleslaw mix with 2 tablespoons mayonnaise and 1 teaspoon apple cider vinegar.
