    cups Swanson® Beef Broth or Swanson® Beef Stock

  • 2

    tablespoons cornstarch

  • 6

    boneless pork chop, 3/4-inch thick (about 2 pounds)

    tablespoons olive oil

  • 1

     large onion, sliced (about 1 cup)

  • 2

    cloves garlic, minced

How to Make It

Step 1

Stir the broth and cornstarch in a small bowl until the mixture is smooth.  Season the pork, if desired.

Step 2

Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat.  Add the pork and cook for 5 minutes or until well browned on both sides. Remove the pork from the skillet.

Step 3

Heat the remaining oil in the skillet.  Add the onion and cook for 3 minutes or until tender-crisp, stirring occasionally.  Add the garlic and cook for 1 minute, stirring often.

Step 4

Stir the broth mixture in the skillet. Cook and stir until the mixture boils and thickens. Return the pork to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the pork is cooked through.

Recipe Tips

  • Recipe Twist: for Dijon-Rosemary Smothered Pork Chops, stir 1 tablespoon Dijon-style mustard into the broth mixture in Step 1.  Stir 2 teaspoons chopped fresh rosemary leaves into the thickened broth mixture in Step 4.

    This recipe is really easy to make

    This recipe reminded me of chicken marsala- I added red onions and mushrooms. My family liked it but my husband thought it was a bit bland. The pork chops were tender and the recipe made plenty of gravy. So if you like the taste of chicken marsala this dish would be for you. I liked it and so did my kids. My husband prefers spicier dishes.

    Easy and good.

    Easy to throw together. I fixed yellow rice and added mushrooms with the onions. For a better result with your chops season them earlier in the day and let set. I used salt, pepper, and season all. I will fix this again the whole family enjoyed.

    Quick and Tasty!

    This recipe has been in heavy rotation in my house for years. Sometimes I substitute the chops for cubed steaks or chicken and it's delicious everytime. I season my meat with salt, pepper and garlic powder before adding to the skillet and I also add a little seasoning to the broth mixture. It makes a delicious gravy!

    Tried this in the crockpot!!

    Added a little Dale's seasoning and a whole onion. 1 tablespoon of crushed Rosemary. Awesome! Had black beans and roasted red potatoes as the sides.

    No flavor !

    My family found it tasteless. I suspect simmering the chops in broth made them tough. Don't waste your time. . . grill the chops.
