How to Make It

Step 1

Cook the beef, onion and garlic powder in a 12-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat.  Pour off any fat.

Step 2

Stir the soup, broth, water, chili powder and potatoes in the skillet and heat to a boil.  Reduce the heat to low.  Cover and cook for 15 minutes or until the potatoes are tender.  Stir in the corn and and cook until the mixture is hot and bubbling.  Sprinkle with shredded Cheddar cheese, if desired.

    Great Quick Dinner

Made this with Beef tips and added black beans. Delicious. Had corn bread on the side. Nice, hearty filling dinner!

    A winner with everyone!

I was surprised how tasty it was with out adding any salt to it. I substituted a can of mild rotel in place of the tomato soup, and added another can of beef broth in place of the cup of water. I did not have cans of regular corn but a combination of corn, diced tomatoes, and okra and it all turned out surprisingly very good!

Great taste and simple to make!

This recipe is great. My family really enjoyed it. I did not have whole kernel corn so I used cream corn and it still came out great. I did add 2 more tablespoons of Chile power and a can of pinto beans. Oh and if you like sour cream put a spoonful on top yummy!!! Next time I will add more veggies likes peas and green beans.
