    tablespoon butter

  • 1 1/4

    pounds skinless, boneless chicken breast halves

  • 1

    can Campbell's® Condensed Broccoli Cheese Soup or Campbell's® Condensed 98% Fat Free Broccoli Cheese Soup

  • 1/3

    cup milk

  • 1 1/3

    cups long grain white rice, cooked according to package directions (about 4 cups)

  • 1/2

    cup Pace® Chunky Salsa - Mild

  • 1/4

    cup sour cream

  • 3

    ounces sliced avocado, (about 1/2 cup) (optional)

How to Make It

Step 1

Heat the butter in a 10-inch skillet over medium-high heat. Add the chicken and cook until it's well browned on both sides.

Step 2

Stir the soup and milk in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 5 minutes or until chicken is cooked through. Serve with the rice. Top with salsa and sour cream and avocado, if desired.

    South of the Border Chicken

    I didn't have Cream of Broccoli soup, so I used half a can of Cream of Chicken Soup and I whisked the milk in the recipe, I added about a quarter of a cup of water and a third of a cup of shredded cheddar cheese. It was a good substitution.
