    cups uncooked rotini (spiral) pasta

  • 2

    cups broccoli florets, cut into 1-inch pieces

  • 1

    medium red bell pepperor green bell pepper, chopped (about 3/4 cup)

  • 1

    can Campbell's® Condensed Cream of Mushroom Soup or Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup

  • 1/4

    cup milk

  • 3/4

    cup Pace® Chunky Salsa - Mildor Pace Picante Sauce

  • 1 1/2

    cups cubed boneless, skinless chicken breasts, cooked

  • 1/4

    cup grated Parmesan cheese(optional)

How to Make It

Step 1

Cook the pasta according to the package directions in a 3-quart saucepan.  Add the broccoli and pepper for the last 4 minutes of cooking time.  Drain the pasta mixture well in a colander.  Return the pasta mixture to the saucepan.

Step 2

Stir the soup, milk, salsa and chicken in the saucepan and cook until the mixture is hot and bubbling.  Sprinkle with Parmesan cheese, if desired.

Recipe Tips

  • Tip: Substitute 2 1/2 cups uncooked medium tube-shaped pasta (ziti) for the rotini.

    I omitted the green peppers and broccoli. I think that this would be good with beef as well.

    Southwest Chicken & Pasta

    Made this today for my husband, he could hardly stop eating it. He raved about it so much I thought he was teasing me. I loved it too I had to leave the table to stop from over eating. I will definitely be making this again and again. I did not put any broccoli (Yuk) in it and I had shredded Parmesan so I put that in with mushrooms, since it is Campbell's Cream of Mushroom Soup and a little onion. Great recipe, thanks Campbell's!

    Southwest Chicken & Pasta

    This turned out very good and is simple to make. I just did a few different things. I added corn with the veggies. I sauteed onions and added left over chicken to it and I added garlic powder and basil. It was really good. I used marble cheese on top really amazing. Will make again

    As a very picky eater, I am always looking for new recipes. I left out the broccoli, and added some cayenne pepper for a little extra kick. This will definitely become a dinnertime regular!

    Southwest Chicken & Pasta

    Made this with my picky eater boyfriend and we both liked it. I used a bag of frozen broccoli instead of fresh and used less green pepper. I also used some cajun grilled chicken for extra flavor. Next time we make this I'll probably add a bag of frozen southwest corn.
