tablespoons vegetable oil
pound skinless, boneless chicken breast halves, cut into cubes
medium onion, chopped (about 1/2 cup)
large carrot, peeled and chopped (about 1/2 cup)
stalk celery, finely chopped (about 1/2 cup)
cloves garlic, minced
cups Swanson® Chicken Broth or Swanson® Organic Free-Range Chicken Broth or Swanson® Natural Goodness® Chicken Broth
can (10 3/4 ounces) Campbell’s® Condensed Tomato Soup (Regular or Healthy Request®)
ounces uncooked spaghetti, broken into 1-inch pieces
tablespoons chopped fresh parsley (optional)
Heat 1 tablespoon of the oil in a 6-quart saucepot over medium-high heat. Add the chicken and cook until it’s well browned, stirring often. Remove the chicken from the saucepot.
Add the remaining oil to the saucepot and heat over medium heat. Add the onion and cook for 1 minute. Add the carrots and cook for 1 minute. Add the celery and garlic and cook for 1 minute.
Stir the broth, soup and 1 cup water in the saucepot and heat to a boil. Stir in the spaghetti. Cook for 10 minutes or until the spaghetti is tender. Stir in the chicken and parsley, if desired, and cook until the chicken is cooked through.

This soup looked so delicious in the picture, but really didn't have the tomato taste I was expecting. It was good, but I added about 1 tsp. of Italian seasoning while the spaghetti was cooking. As I left all the veggies in a large dice, it took a little longer for it to cook. It was a hearty soup and definitely one I will make again, but will probably add another can of tomato soup.

I lost this recipe, since we moved into my mother in-laws. It's packed up somewhere in storage. Tried making it without the recipe, and I just knew it was missing something. I am so happy I found it again! Can't wait to make it again. It really is my favorite soup ever!!! But I am a spaghetti head, so go figure! LOL

This is a great base recipe for you to make it your own. I added sausage along with the chicken to bulk it up a little, and i doubled the Tomato soup (low sodium), chicken stock (low sodium), and never used water i subbed for chicken stock. I also doubled the carrots and celery. The only think i would change next time is instead of spaghetti i will use small noodles, the spaghetti made it difficult to eat. but it was very yummy!!

Very good! I used canned chicken and overloaded on the carrots, celery and onion. Used whole wheat spaghetti and six cups of chicken broth. This seems like it would be a good soup to add things too as well (i.e. zucchini, beans, hamburger, etc). My girlfriend did not want to make this because of the Tomato Soup but she ended up loving it! Not too tomato-y if you're worried about that :)
