    Add Spanish Olives!!

Wanted to "Spanish" it up a bit....added some sliced stuffed Spanish olives (to taste) along w/ a splash of the olive liquid (to taste)...Really added a dimension to the dish!!!

    Spanish Chicken & Chorizo

Super quick and easy! I couldn't find any chorizo so I just used hot Italian sausage and I used chicken breast instead of thighs (personal preference). Great flavor! I served it over brown rice that I cooked with chicken broth and added some chopped scallions to. My husband requested that I make this dish again, and frequently! I was also able to serve it to my young daughter who doesn't like spicy foods by removing the hot sausage slices from her meal. And she liked it, too! Definitely a keeper!
