    If you don't use wine.....

I juiced a whole lemon and topped off a 1/3 c with water. Next time i might add the zest to punch up the flavor and use chicken broth not water. It was very good and i plan on making this again. Try frying the chorizo separate from the chicken so it browns better then put them in the same pan to finish off with the sauce.

    Add Spanish Olives!!

Wanted to "Spanish" it up a bit....added some sliced stuffed Spanish olives (to taste) along w/ a splash of the olive liquid (to taste)...Really added a dimension to the dish!!!

    Spanish Chicken & Chorizo

Super quick and easy! I couldn't find any chorizo so I just used hot Italian sausage and I used chicken breast instead of thighs (personal preference). Great flavor! I served it over brown rice that I cooked with chicken broth and added some chopped scallions to. My husband requested that I make this dish again, and frequently! I was also able to serve it to my young daughter who doesn't like spicy foods by removing the hot sausage slices from her meal. And she liked it, too! Definitely a keeper!
