    pound sweet Italian pork sausage, casing removed

    teaspoons vegetable oil

  • 1 3/4

    cups Swanson® Beef Broth or Swanson® Beef Stock

  • 1

    can (14.5 ounces) whole peeled tomatoes, cut up

  • 1 1/2

    cups Pace® Picante Sauce - Medium

  • 1/4

    teaspoon garlic powder or 1 clove garlic, minced

  • 8

    ounces (1/2 of a 1 pound package) medium shell shaped pasta, cooked and drained (about 4 1/2 cups)

  • 1

    package (about 10 ounces) frozen cut green beans, thawed (about 2 cups)

  • 1

    can (anout 15 ounces) kidney beans, rinsed and drained

  • 1/3

    cup shredded Monterey Jack cheese or mozzarella cheese

How to Make It

Step 1

Shape the sausage firmly into 1/2-inch meatballs.

Step 2

Heat the oil in a 4-quart saucepan over medium-high heat. Add the meatballs and cook until well browned on all sides. Remove the meatballs from the saucepan. Pour off any fat.

Step 3

Stir the broth, tomatoes, picante sauce and garlic powder in the saucepan and heat to a boil. Stir in the shells. Return the meatballs to the saucepan. Reduce the heat to low. Cover and cook for 10 minutes, stirring often.

Step 4

Stir in the green beans and kidney beans. Cook for 10 minutes or until the meatballs are cooked through and the shells are tender, stirring occasionally. Sprinkle with the cheese before serving, if desired.

  • Easy Substitution: Substitute 1 can (14.5 ounces) cut green beans, drained for the frozen.

    Good with changes, better

    just brown the sausage, leave out the green beans, add a can of whole kernel corn and a can of black beans, a little hot sauce and some black pepper. Great

    Spicy Mexican Minestrone Stew

    This had a lot of flavor. Easy to make. I did make little meatballs, but I agree with Kelly C., I think I will leave green beans out the next time I make it. To me, they seemed kind of weird in it. I will definitely make this again.

    Spicy Mexican Minestrone Stew

    I didn't bother to make the sausage into meatballs, I just browned it like you would burger and tossed it in. I also used more tomatoes and more garlic. It was very tasty, but next time I'll leave out the green beans. I'm not a huge fan of green beans anyway :) Nice spicy flavor without being too overwhelming.

    Spicy Mexican Minestrone Stew

    My husband and I really enjoy this recipe and I have made it several times. It is very easy and I usually cook it in the crockpot. I even served it to company and it was a winner and they even wanted the recipe.
