cups Pepperidge Farm® Herb Seasoned Stuffing
tablespoon butter, melted
pound ground beef
medium onion, chopped (about 1/2 cup)
can (14.5 ounces) canned whole tomatoes, cut up
can (about 8 ounces) whole kernel corn, drained
medium green pepper, cut lengthwise into quarters
Stir 1/4 cup stuffing and butter in a medium bowl.
Cook the beef and onion in a 10-inch skillet over medium-high heat until the beef is well browned, stirring often to separate meat. Pour off any fat.
Stir the tomatoes and corn in the skillet. Add the remaining stuffing and mix lightly.
Arrange the peppers, cut-side up, in a 2-quart shallow baking dish. Spoon the beef mixture over the peppers. Cover the baking dish.
Bake at 400°F. for 25 minutes or until the peppers are tender. Sprinkle with the reserved stuffing mixture. Bake, uncovered, for 5 minutes or until the topping is golden.

I made this for my husband, as I don't like peppers. He told me I could make it every week! I had to make one change, due to the store I shop at doesn't carry Pepperidge Farm stuffing, other than that I followed the recipe exactly. I can't see leaving a review for a recipe after changing and adding different items, that would make it a different recipe. I'll be making this again and again for him.

I used chicken stuffing, very good. Added a can of tomato sauce, I think it gave it more flavor. Used creamed corn, it's all I had and it tasted great. Put some into a tortilla shell, and my husband liked it. We really liked this recipe and I'll make it again!
