    cup Swanson® Vegetable Broth or Swanson® Organic Vegetable Broth

  • 2

    green onion, sliced (about 1/4 cup)

  • 2

    tablespoons chopped sun-dried tomatoes in olive oil

  • 1

    dash Freshly ground black pepper

  • 1/4

    teaspoon dried basil leaves, crushed

  • 2/3

    cup couscous

How to Make It

Step 1

Heat the broth, onions, tomatoes, pepper and basil in a 2-quart saucepan over medium-high heat to a boil. Remove from the heat and stir in the couscous. Cover and let stand for 5 minutes. Fluff with a fork.

Step 2

Spray the bottoms of 4 (6-ounce) custard cups with vegetable cooking spray. Spoon the couscous mixture into the cups and press down firmly. Unmold the cups onto 4 serving plates.

    Sun-Dried Tomato Couscous Cups

    I just had to add a minced clove of garlic to the mix, along with some oregano.Before serving I sprinkled each with a few pinches of Parmesan cheese, and I served a hot sauce on the side. Well received, and really yummy. LOL, I doubled the recipe although I was only serving four people, but they were all gone!
