cup Swanson® Aseptic Vegetable Broth or Swanson® Certified Organic Vegetable Broth
green onion, sliced (about 1/4 cup)
tablespoons chopped sun-dried tomatoes in olive oil
dash Freshly ground black pepper
teaspoon dried basil leaves, crushed
Heat the broth, onions, tomatoes, pepper and basil in a 2-quart saucepan over medium-high heat to a boil. Remove from the heat and stir in the couscous. Cover and let stand for 5 minutes. Fluff with a fork.
Spray the bottoms of 4 (6-ounce) custard cups with vegetable cooking spray. Spoon the couscous mixture into the cups and press down firmly. Unmold the cups onto 4 serving plates.
